Foolproof Hollandaise Sauce
Recipe by Brandon McDearis
Hollandaise sauce may sound intimidating to the novice cook. However, this recipe couldn’t be easier to put together, and it holds up for hours after preparation. Our hollandaise sauce is a delicious sauce that can be added to eggs, meat, and vegetables. With its 4:1 fat/net carb + protein ratio, it is the perfect condiment to many meals that can often save the day when trying to balance out the day’s macronutrients.
- 6 egg yolks
- dash of Worcestershire sauce
- dash of hot sauce
- juice from half a lemon
- pinch of Kosher salt and ground black pepper
- 1/2 pound of butter
Note: The key to success is to make sure your butter is hot enough to slightly cook the eggs. It is crucial that you add the butter immediately after you take it out of the microwave, and that you add it through the top of the blender while the blender is on.
- Put the first 5 ingredients in a blender. Microwave the butter in a glass measuring cup (cover with a paper towel to prevent splattering) for 2-3 minutes until melted and bubbling.
- Turn the blender on low and quickly pour butter through the top of the blender. Blend for about 10-15 seconds until smooth.
- Yield: 8-10
