Keto biscuits and gravy

Ingredients:

  • Biscuits:
  • 2 cups almond flour
  • 2½ teaspoons baking powder
  • ½ teaspoon salt
  • ¼ cup heavy cream
  • 4 tablespoons grass-fed unsalted butter, diced*
  • 4 ounces full-fat mozzarella or cheddar, shredded
  • 2 eggs
  • Gravy:
  • ½ pound Italian pork sausage 
  • 4 ounces full-fat cream cheese
  • ½ cup heavy cream
  • ½ cup chicken or beef bone broth
  • Garlic powder, to taste
  • Salt and pepper, to taste

Preparation:

  1. Preheat oven to 350 degrees F. Line a large sheet pan with parchment paper.
  2. In a large bowl, mix the dry ingredients (almond flour, baking powder, salt).
  3. Using a fork, cut in the butter cubes until it resembles coarse crumbs.
  4. Mix in the heavy cream, a couple tablespoons at a time.
  5. Beat the eggs and add to the mixture.
  6. Add the cheese and mix until it forms a dough.
  7. Cut the dough into 8 equal pieces and form into a ball. Spread evenly across the sheet pan and bake 18-20 minutes. (Biscuits can be stored covered in the refrigerator for 2-3 days, or wrapped tightly and stored in the freezer for up to 3 months.)
  8. While biscuits are in the oven, heat up a saucepan and brown the sausage until cooked through.
  9. Add the cream cheese, heavy cream, and broth. Season to taste with salt, pepper, and garlic powder. (Feel free to add other herbs and spices if you’d like!)
  10. Lower the heat to a simmer. Continue to cook, stirring frequently, until the gravy has thickened, 7-10 minutes.
  11. For serving, split open one warm biscuit and spoon ¼ cup of sausage gravy over it.
