Keto Egg Crepes with Blueberry Cream Sauce
- 2 tablespoons butter
- 4 eggs
- 2 tablespoons heavy whipping cream
- ½ cup heavy whipping cream
- ½ cup frozen blueberries
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- For the Egg Crepe: Whisk together eggs and 2 tablespoons heavy whipping cream.
- Melt 1 tablespoon butter in a large nonstick skillet. Pour half of the egg mixture into skillet, swirling pan to coat the bottom and creating the thinnest layer egg possible.

- Run a rubber spatula around edges of the egg crepe to loosen and flip the crepe to fully cook the other side, another 1-2 minutes.
- Repeat the process with the other half of the egg mixture and 1 tablespoon butter.
- For the Blueberry Cream Sauce: In a small saucepan over medium-high heat, combine frozen blueberries, ½ cup heavy whipping cream, vanilla extract, and cinnamon.
- Bring to just below a boil, whisking constantly. Remove from heat, and using the back of a fork, mash blueberries into cream. If you desire a smoother sauce, you can puree with an immersion blender.
- Serve 1 egg crepe topped with ½ cup blueberry cream sauce.
- Prep Time: 5 minutes
- Cook Time: 10 minutes
- Yield: 2
