On the one hand, both can be made gluten-free and sugar-free if you want them that way. Both are also made with eggs.

Keto Egg Crepes with Blueberry Cream Sauce

Ingredients:

  • 2 tablespoons butter
  • 4 eggs
  • 2 tablespoons heavy whipping cream
  • ½ cup heavy whipping cream
  • ½ cup frozen blueberries
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon

Preparation:

  1. For the Egg Crepe: Whisk together eggs and 2 tablespoons heavy whipping cream.
  2. Melt 1 tablespoon butter in a large nonstick skillet. Pour half of the egg mixture into skillet, swirling pan to coat the bottom and creating the thinnest layer egg possible.
  3. Allow to cook undisturbed 1-2 minutes or until set and cooked on the bottom.
  4. Run a rubber spatula around edges of the egg crepe to loosen and flip the crepe to fully cook the other side, another 1-2 minutes.
  5. Repeat the process with the other half of the egg mixture and 1 tablespoon butter.
  6. For the Blueberry Cream Sauce: In a small saucepan over medium-high heat, combine frozen blueberries, ½ cup heavy whipping cream, vanilla extract, and cinnamon.
  7. Bring to just below a boil, whisking constantly. Remove from heat, and using the back of a fork, mash blueberries into cream. If you desire a smoother sauce, you can puree with an immersion blender.
  8. Serve 1 egg crepe topped with ½ cup blueberry cream sauce.

  • Cook Time: 10 minutes
