Keto Lemon Bars Recipe
Ingredients:
- 8 tablespoons grass-fed butter, melted
- 1¾ cups almond flour
- ⅛ teaspoon salt
- 1 cup KetoLogic Erythritol
- Juice from 3 lemons
- Zest of 1 lemon
- 3 eggs
- ½ teaspoon vanilla extract
Preparation:
- Preheat the oven to 350°F. Line an 8x8 baking pan with parchment paper.
- In a large mixing bowl, add the melted butter, almond flour, salt, and erythritol. Mix well.
- Pour into baking pan and bake 20 minutes. Let cool for 10 minutes.
- In the meantime, combine the lemon juice, lemon zest, eggs, and vanilla extract.
- Pour the filling onto the crust. Bake for another 25 minutes.
- Cool completely before cutting into 8 equal pieces.
