Keto zucchini fries

Ingredients:

  • Two zucchini squashes
  • 6 slices bacon
  • 16 ounces cheese
  • Salt and pepper to taste

Preparation:

  1. Preheat oven to 375 degrees. While the oven preheats, cut each zucchini lengthwise into about six even strips (12 total).
  2. Repeat the same step with the cheese to make long, thin strips of cheese that wrap around each piece of zucchini.
  3. Season the zucchini slices with salt and pepper.
  4. Line a piece of bacon with the strip of cheese and wrap around each slice of zucchini. Try to keep the cheese tucked under the bacon, or it will melt and ooze out.
  5. Line a baking sheet with aluminum foil and spray avocado oil so the fries don’t stick to the surface.
  6. Bake the fries until the bacon has become a slightly golden color. If you want a crunchier bacon wrap, broil for 3-5 minutes after cook time. Watch closely to make sure it doesn’t burn.
