Ingredients:
- Steak: 3 pounds ground beef
- ½ cup panko breadcrumbs*
- 2 eggs
- 2 tablespoons reduced-sugar ketchup
- 4 teaspoons dry mustard
- 8 dashes Worcestershire sauce
- 1 tablespoon Kosher salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 tablespoons butter
- 2 tablespoons olive oil
- Gravy: 1 onion, thinly sliced
- 4 cups beef broth (reserve 2-3 tablespoons)
- 2 tablespoons reduced-sugar ketchup
- 2 teaspoons kitchen bouquet
- 8 dashes Worcestershire sauce
- 2 tablespoons cornstarch*
Notes: To increase your fat macros and decrease your carb macros, you can replace the panko breadcrumbs and cornstarch with other ingredients.
For the panko, you can substitute 1/2 cup crushed unflavored pork rinds.
For the gravy, you can add 4 tablespoons butter and 1/4 cup almond flour, while decreasing beef broth to 2 cups to make a roux gravy.
Directions without cornstarch:
- Remove patties from skillet and transfer to plate or serving platter, reserving all drippings in skillet. Melt butter in same skillet over medium heat. Add onions and sauté until soft (about 5-10 minutes). Whisk in 1/4 cup almond flour and cook until slightly browned, another 4-5 minutes.
- Whisk together 2 cups beef broth through Worcestershire sauce and add this mixture into browned flour and onions, whisking well to combine. Cook over medium-low heat, stirring constantly, until desired thickness.
- Add patties back to pan until heated through. Spoon gravy over Salisbury steaks.
Preparation:
- In a large bowl, mix together all ingredients (except for butter and oil) and form into 8 patties. Heat oil and butter in a pan at medium heat and cook patties on both sides until browned on outside, but no longer pink in middle (roughly 5-8 minutes each side).
- Remove patties from skillet and transfer to plate or serving platter. Add onions to skillet where meat was cooked and sauté until soft at medium-high heat (about 5-10 minutes). Add next four ingredients and whisk together.
- Mix cornstarch with reserved beef broth and add to gravy to thicken. Add patties back to pan until heated through. Spoon gravy over Salisbury steaks.
